Ingredients:

2 cups heavy cream

1/2 cup pure maple syrup

1 vanilla bean, split lengthwise (or 1 teaspoon vanilla extract)

5 large egg yolks

Pinch of salt

Sugar, for the caramelized top

Method:


Preheat your oven to 325°F (165°C).

In a saucepan, combine heavy cream and maple syrup. Scrape in the seeds from the vanilla bean and add the pod (or vanilla extract). Heat over medium until it’s hot but not boiling.

In a bowl, whisk together egg yolks and a pinch of salt. Gradually whisk in the hot cream mixture.

Strain the mixture through a fine sieve into a jug or bowl. This removes the vanilla pod and any egg clumps, ensuring a smooth custard.

Divide the mixture among ramekins. Place them in a large baking pan and fill the pan with boiling water halfway up the sides of the ramekins.

Bake for 40-45 minutes until the custards are set but still slightly wobbly in the center.

Remove the ramekins from the water bath and let them cool to room temperature, then chill for at least 2 hours.

Before serving, sprinkle sugar evenly on top of each custard. Use a kitchen torch to caramelize the sugar until it's a deep amber color.
